Fingerling Potato & Lobster Salad

Ingredients:
1 lb Russian banana Fingerling potatoes
1/2 lb cooked lobster, cut into 1/2 inch chunks
1/2 cup cooked shelled English peas (frozen will do)
1/2 cup mayonnaise
1/4 cup finely minced red onion
1/2 cup roughly chopped basil
1/2 cup lemon juice
1 teaspoon each salt & pepper
1 tablespoon truffle oil.

Optional:
If you can get it 1oz of thinly shaved summer truffle for garnish

Method:
Cut potatoes into a medium dice, approx 1/2 inch chunks & cook in boiling, salted water until tender. Strain and refrigerate uncovered until cold all the way through - about 1 hour. In a medium sized bowl, place potatoes, lobster, peas and truffle oil and mix together. Add mayonnaise, lemon juice, salt & pepper, red onion, basil and mix until all combined. Spoon into serving dish and garnish with finely shaved truffle or basil leaves.
